Broccoli Zucchini Soup

Broccoli is certainly on the top of the list when it comes to the healthiest vegetables. The reason being that broccoli is rich in antioxidants, fiber and numerous vitamins and minerals. To read more about the health benefits of broccoli click here.

Ingredients

·       1 tablespoon of ghee, butter or coconut oil

·       1 red onion, chopped

·       1 garlic clove, chopped

·       ½ teaspoon of turmeric powder

·       ½ tsp of kelp powder

·       1 tsp of sea salt

·       Pinch of black pepper

·       1 broccoli & the stem peeled and chopped

·       1 zucchini, diced

·       600ml of chicken stock or bone broth

·       10g of ghee, butter or coconut oil

Method

Melt a tablespoon of ghee, butter or coconut oil in a large saucepan. Add the onions and cook until golden brown, stirring occasionally. Add the garlic, stir and let it cook for 1 minute. Add the turmeric, kelp powder, salt and pepper and stir. Add the chopped broccoli and zucchini, stir and add the stock or bone broth. Let it cook on low to medium heat for 15 minutes.

Add the 10g of butter and blend with a stick blender or by transferring into a blender. Handle the last step carefully as you are dealing with a hot liquid.

Serve the soup with seed crackers or a slice of the Almond Seed Loaf with avocado, kimchi or sauerkraut, lime juice and some fresh coriander. Enjoy!

The soup can be frozen or kept in the fridge for up to 2 days.
