Seed & Coconut Bars

Ingredients

  • 1/2 cup of sunflower seeds

  • 4 tablespoons of chia seeds

  • 1 tablespoon of linseed

  • 1 cup desiccated coconut

  • 1 tsp organic lemon rind (grated)

  • 1 tablespoon of coconut oil

  • 1/4 tsp cinnamon power

  • 1/2 cup of filtered water


Method

Preheat oven to 180°C (350F).

Soak the chia seeds for 10 minutes in 1/2 cup of filtered water.

Combine the linseed with the sunflower seeds in a food processor or Thermomix and blend at high speed for 5 seconds. Add chia seed water mixture, desiccated coconut, coconut oil, cinnamon and lemon rind and blend well.

Line a 18 cm x 26.5 cm baking dish with parchment paper and press the mixture into the dish. Press it very firmly that the mixture becomes compact.

Bake in the oven for 40 minutes. Once cooked, allow to cool and cut into preferred bars sizes. Store in an airtight container. Enjoy!
