Raspberry Chia Jam
This is the quickest and healthiest jam you will every make! It is full of healthy prebiotics which fuel your gut microbiome, it tastes delicious and is made in 10 minutes.
This recipe yields one cup of jam. So if you like it, be sure to double the quantities next time. Enjoy!
Ingredients & Tools
2 cups of frozen raspberries
2 tbsp of chia seeds
1 tbsp lemon juice
1 -2 tbsp of raw honey or monkfruit sweetener
1/4 tsp vanilla
Conventional Method
Put the raspberries into a small saucepan and heat over medium-high heat. Stir occasionally until the fruit is heated through and begins to break down and bubble. You can use a potato masher to break down the raspberries into the desired consistency.
Stir in the chia seeds and lemon juice and stir well to combine. Add 1 tbsp of honey and stir. Taste to see if it is sweet enough.
Remove from heat and let cool for 10 minutes. The jam will thicken considerably as it cools.
Transfer into a glass jar and refrigerate for up to 1 week
Thermomix Method
Put all the ingredients except for the honey into the mixing bowl. Be careful to keep the blades as free from ingredients as possible.
Switch the Thermomix to 9 minutes, temperature 100 at speed 1. Add the honey and put on speed 5 for 20 seconds. Pour into a glass jar and store in the fridge for up to 1 week.
