Okra Subji
Ingredients
3 tablespoons ghee or coconut oil
1 tablespoon fresh ginger, peeled and grated
1kg okra, stem ends trimmed and discarded
½ teaspoon turmeric powder
1 teaspoon garam masala
½ teaspoon sea salt
Method
Heat the ghee or coconut oil in a large wok or frying pan over low-medium heat.
Add the ginger and stir-fry for 1 minute. Add the okra, then the turmeric powder and garam masala and stir well to coat the okra with the spices.
Cook for 10 minutes, stirring occasionally to prevent burning.
Sprinkle with salt, stir and serve immediately. Enjoy!
