Probiotic Nut Cheese
Going dairy-free can have us missing our delicious cheeses. This creamy, tangy and rich probiotic nut cheese, made from activated almonds, can definitely make up for it. It is seriously tasty and addictive, particularly when combined with seed crackers! Additionally, almonds are superior to other nuts, regarding their medicinal properties. They restore, tone and nurture, supporting the digestive tract and nervous system, as well as alkalizing your system.
Ingredients
2 cups raw almonds
Warm water for soaking the almonds
2 tablespoons of apple cider vinegar
½ cup filtered water
2 teaspoons sea salt
Zest from ½ a lemon
1 tablespoon lemon juice
2 tablespoons nutritional yeast
1 teaspoon sea salt
¼ teaspoon turmeric powder
¼ teaspoon smoked paprika powder
¼ teaspoon kelp powder or granules
1 teaspoon garlic, minced
Pinch of cracked black pepper
1 probiotic capsules
1 tablespoon fresh dill, chopped
1 tablespoon fresh coriander, chopped
Method
Place the 2 cups of raw almonds in a large bowl and cover with warm water.
Add 2 tablespoons of apple cider vinegar to the almonds and let them activate on the kitchen bench for 8-12 hours.
Discard the soaking water and cover the almonds with boiling water.
Use a tablespoon to take a batch of almonds out of the bowl at a time. Put them in an empty bowl and pop them out of their skin with your fingers. You need a third bowl to put the almond skin in. Repeat the process until all almonds are peeled, putting the skin in one bowl and all the peeled almonds in another bowl.
