Dandelion Chicory Rose Petal Chai

This ‘dandy’ chai tea has a deep, nutty flavour and is supercharged by anti-inflammatory and anti-parasitic aromatic spices. Dandelion is a potent digestive aid and chicory root an exceptional skin, lymphatic and blood detoxifier.

Serves: 2

Ingredients

  • 1 ½ cups water

  • 1 teaspoon dandelion root

  • 1 teaspoon chicory root

  • 1 teaspoon rose petals

  • 1 teaspoon fennel seeds

  • 4 green cardamom pods, cracked open with a mortar and pestle

  • 3 whole cloves

  • ½ inch cinnamon stick, broken up

  • 1 ½ cups almond or macadamia milk

  • 1-2 teaspoons raw local honey


Method

Bring the water to boil in a medium-sized saucepan, then add all the ingredients, except for the almond or macadamia milk and honey.

Simmer for 5 minutes on low-medium heat, with the lid on.

Add your choice of milk and simmer for an additional 3 minutes. Stir in the honey and strain into cups. Enjoy!
