Coconut Cookies
This is a simple, delicious and fast recipe, as it only calls for 6 ingredients. These are the favorite cookies of my two boys and therefore they do not last long in our house. I hope that your children enjoy them just as much.

Makes 19 cookies
Ingredients
2 cups of desiccated coconut
½ cup of sunflower meal (grind sunflower seeds in a food processor or blender until fine)
4-5 tablespoons maple syrup or granulated sweetener such as monkfruit/stevia, depending on how sweet you want it.
2 pasture-rasied eggs
1 teaspoon vanilla extract
Rind from 1 organic lemon
Method
Preheat the oven to 180°C (350F) and line a baking sheet with parchment paper.
Combine all the ingredients into a large bowl and mix until combined.
Grab about 1 teaspoon of the mixture using a dessert tablespoon, then with your hands roll the mixture into a ball.
Place onto the prepared baking sheet and flatten them out slightly.
Bake for 15 minutes, or until golden.
Allow the cookies to cool and store in an air tight container for up to 5 days in the fridge. Enjoy!
