Blueberry Seed Bircher


Serves 3

Ingredients

  • 2 tablespoons chia seeds

  • 2 tablespoons ground flaxseeds

  • 2 tablespoons hemp seeds

  • ¼ cup psyllium husks

  • ¼ cup sunflower seeds

  • ¼ teaspoon cinnamon powder

  • 1/8 teaspoon cardamom powder

  • ½ cup coconut or almond yoghurt

  • 1 ½ cups almond milk

  • ½ teaspoon vanilla essence

  • 1 cup frozen blueberries


TOPPINGS

  • Coconut yoghurt

  • Passionfruit

  • Fresh berries

  • Fresh mint


Method

Place all dry ingredients into a bowl and mix well.

Put the coconut yoghurt, milk, vanilla essence and blueberries in a high-speed blender and blend for 20 seconds at high speed. Pour the blueberry smoothie mixture over the dry ingredients in the bowl, stir well to combine and transfer into the fridge for one hour or overnight.

I like to take this bircher out of the fridge as soon as I get out of bed in the morning. This ensures I can enjoy it at room temperature with a dollop of coconut yoghurt after my shower.

 

FODMAP

Use 1 tablespoon of flaxseeds. Omit the psyllium husks and use quinoa flakes instead. Use almond milk, ¼ cup of blueberries and ¾ cup of frozen strawberries. Top with kiwi and passion fruit. Enjoy!
