Acai Bowl

Ingredients
1 tbsp Acai freeze dried powder (e.g. Amazonia, Navitas, Tropeaka, Doorsteps Organics, Sunfoods, Terrasoul)
1 tbsp of hydrolysed collagen
1/3 cup zucchini (peeled)
1/3 cup cauliflower, cooked and frozen
1 frozen banana
1 cup of frozen berries
400g coconut milk
1/3 cup coyo coconut yoghurt
TOPPINGS
Chia seeds
Linseeds, ground
Fresh mint
Home-made granola
Nuts, toasted and chopped
Sunflower or pumpkin seeds, toasted
Fresh seasonal fruit
Desiccated coconut, toasted
Goji and/or inca berries
Almond butter
Method
Put all the ingredients in a high-speed blender and process for 2 minutes at high speed (Thermomix speed 10). Distribute between two bowls, depending on how hungry you are and garnish with your favorite toppings. Enjoy!
